HEALTHY HOLLANDAISE 
1/3 c. nonfat yogurt
3 tbsp. thawed egg substitute
1 tbsp. lemon juice
Pinch of cayenne

SAUCE FIGARO
1/3 c. nonfat yogurt
3 tbsp. thawed egg substitute
1 tbsp. lemon juice
Pinch of cayenne
2 tbsp. tomato sauce

Mix 1/3 cup non-fat yogurt, 3 tablespoons egg substitute, 1 tablespoon lemon juice and pinch of cayenne. Serve over poached chicken or hot microwaved vegetables (such as asparagus). Saute Figaro: into above, fold in 2 tbsp. of tomato sauce. Serve over chilled strips of lean beef or dipping sauce for shell fish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
