CRISPY HERB CHICKEN 
2/3 c. Hungry Jack mashed potato flakes
1/4 c. grated Parmesan cheese
2 tsp. parsley flakes
1/2 tsp. onion powder
1/4 tsp. garlic salt
1/8 tsp. paprika
Dash of pepper
1 whole chicken, quartered, skinned, rinsed and patted dry
1/3 c. butter, melted

Heat oven to 375 degrees. Grease or line with foil 15 x 10 inch jelly roll pan or 13 x 9 inch pan. I prefer the 13 x 9 inch pan. In medium bowl combine potato flakes, cheese, parsley flakes, onion powder, garlic salt, paprika and pepper, stir until well mixed. Dip chicken pieces into butter. Roll in potato flake mixture to coat. Place in greased pan. Bake at 375 for 60 minutes or until chicken is tender and golden brown.
