CHEESY SPINACH BITES 
1 tbsp. olive oil
2 cloves minced garlic
1 (6 oz.) bag baby spinach
1 tsp. Italian seasoning
1 1/2 c. shredded pepper Jack cheese
Club or Ritz crackers

Sauté garlic in oil in a skillet. Add spinach and cook until spinach wilts. Remove from heat and add Italian seasoning and cheese; mix well. Place mixture on each cracker and bake for 5 to 7 minutes at 375°F.
