ALMOND POTATO PUFF 
1/2 c. ground almonds
4 tbsp. slivered almonds
1/2 c. cheddar cheese, shredded
1 1/2 lbs. potatoes, peeled & quartered
1 sm. onion, diced
2 tbsp. butter
2 eggs
Dash nutmeg
Dash black pepper
3/4 c. whipping cream
Salt

Cook and drain potatoes; puree and mash thoroughly and add onion. Add butter and eggs, one at a time. Scald whipping cream and gradually add potato mix, beating until fluffy. Season with almonds, nutmeg, pepper and salt and pour into greased shallow 1 1/2 quart baking dish. Sprinkle cheese and slivered almonds on top and bake at 400 degrees for 20 to 25 minutes or until puffed and golden brown.
