SCALLOPED CORN 
3 c. cut uncooked corn
2 eggs, well beaten
1/2 tsp. salt
3/4 c. cracker crumbs
2 tbsp. butter
1 c. milk

Combine corn, eggs, and salt. Place alternate layers of corn mixture and crumbs in greased baking dish; dot each layer with butter. Pour milk over top and bake in slow oven (325 degrees) about 30 minutes. Serves 6-8.

Variation: Use 2 cups cooked corn and 1/2 pound browned pork sausage. Arrange in layers, saving a few sausages for the top. Bake as above.
