SCALLOPED CARROTS 
3-4 c. cooked mashed carrots (3-4 big ones)
2 slices bacon, cooked and cut into squares (I omit)
1 c. milk
1 c. bread crumbs
1 onion, chopped fine and steamed until soft
2 beaten eggs
1/4 c. butter
Salt and pepper

Mix all together. Bake in greased casserole. Can prepare night before. Bake at 350 degrees for 30 minutes.
