SNOW PUDDING | |
1 tbsp. granulated unflavored gelatin 1/4 c. cold water 1/8 tsp. salt 1 c. boiling water 1 c. sugar 1/4 c. lemon juice 3 egg whites Soak gelatin in cold water and add salt. Pour boiling water over it and stir until dissolved. Add sugar and lemon juice and strain into a large bowl to cool. Beat egg whites stiff. When jelly thickens, add egg whites and beat with wire whisk until stiff enough to hold its shape. Let chill until firm. Serve with custard sauce. Recipe follows. CUSTARD SAUCE: In double boiler, place 2 tablespoons sugar, 1 tablespoon flour, 1/4 teaspoon salt and 1 egg yolk. Stir. Then add 1 1/4 cups milk slowly. Cook over hot water, stirring until thick. Cool and add 1/2 teaspoon vanilla. Cool. Spoon over servings of the Snow Pudding. This makes a nice light dessert. |
