SNOW PUDDING 
1 tbsp. plain gelatin
1/4 c. cold water
1 c. boiling water
2/3 c. sugar
1/4 c. lemon juice
1/4 tsp. salt
1 tsp. grated lemon rind
2 egg whites

Soften gelatin in cold water. Dissolve in boiling water. Add sugar, lemon juice, salt and grated lemon rind. Chill until partly jellied. Beat egg whites until stiff. Add jellied mixture and continue beating until it holds its shape. Pour into mold. chill and serve with custard sauce.
