GREEK SALAD 
8 lg. ripe tomatoes, cut into cubes
1 clove garlic, chopped
1 green pepper, cut into thin strips
1 tsp. dried oregano, crushed
1/4 c. fresh lemon juice
1 lb. feta cheese, cut into 1/2 inch cubes
12 green onions, sliced
12 radishes, thinly sliced
1/3 - 1/2 c. olive oil
Salt and pepper to taste

Place tomatoes and cheese cubes in a large bowl that has been rubbed with a cut clove of garlic. Add green onions, green pepper and radishes. Sprinkle with oregano and toss gently.

Mix oil and lemon juice with salt and pepper in a small bowl. Pour over salad and toss gently. Chill until ready to serve. Toss lightly before serving and garnish with anchovy fillets, if desired. Serves 8.
