RICOTTA CHEESE COOKIES 
1 lb. butter
2 c. sugar
3 eggs
1 lb. Ricotta cheese
2 tsp. vanilla
1 tsp. salt
4 c. flour
1 tsp. baking soda

ICING:

2 tbsp. butter
2 tbsp. milk
2 c. powdered sugar
Food coloring (optional)

Cream together butter and sugar until light and fluffy. Combine eggs, cheese, vanilla and salt. Add to butter mixture. Sift together flour and baking soda. Add to mixture. Drop by spoonful onto baking sheet. Bake at 350 degrees for 12 minutes. Do not brown. Frost when cooled. Makes a nice soft cookie.
