RITZ PIE "MOCK APPLE PIE" | |
6 c. water 3 c. sugar 6 heaping tsp. cream of tartar 12 Ritz crackers CRUST: 4 1/2 c. flour 1 tsp. baking powder 1 1/8 tsp. salt 1 1/2 c. shortening 2 eggs 1/2 c. milk Filling: Boil water, sugar and cream of tartar for 2 minutes. Add crackers, boil for another 2 minutes without stirring. Set aside to cool. Crust: Sift flour, baking powder and salt. Cut in shortening. Beat eggs and milk, add to flour mixture. Blend and divide into 2 parts. Roll out on floured board and line one large cookie sheet. Pour cooled filling into crust and dot generously with butter. Sprinkle with cinnamon, cloves, nutmeg (top should be completely covered and dark brown in color). Roll out top crust. Make small slashes on top. DO NOT SEAL THE EDGES. Bake at 400 degrees for 30-40 minutes. While still warm sprinkle heavily with powdered sugar. |
