MOCK APPLE PIE 
1 1/2 c. sugar
2 c. water
2 tsp. cream of tartar
24 Ritz crackers
1 tsp. lemon juice (or vinegar)
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. allspice
Dots of butter

Combine water, sugar and cream of tartar. Bring to a rolling boil. Add crackers whole and cook 2 minutes. (DO NOT STIR.) Cool and add lemon juice (or vinegar). Pour into unbaked pie crust.

Dot filling with butter and sprinkle on spices. Add top pie crust. Bake at 425 degrees for approximately 40 minutes.
