MAPLE NUT TAPIOCA 
2 c. milk
1 c. maple syrup
1/3 c. minute tapioca
1/2 tsp. salt
1 egg, separated
1/2 c. walnut meats

Scald milk in double boiler. Add syrup, tapioca, and salt. Cook until tapioca is clear, then add beaten egg white and chopped nuts.
