MASHED POTATO MOUNTAIN | |
6-8 med. red potatoes 3 tbsp. butter (plus more for dish) 1 sm. onion, minced 1/2 c. milk, heated 1 1/4 c. grated cheddar cheese Salt & pepper to taste 2 tbsp. chopped parsley Cover potatoes with water and dash salt and cook for 20-25 minutes or until tender. Meanwhile, saute onion in tablespoon butter until translucent. Add milk to pan and heat through. Remove from heat and keep warm. Drain potatoes. Return pot briefly to heat so potatoes dry. Mash with potato masher. Beat in milk-onion mixture. Fold in 1 cup cheese and season to taste. Butter 9 inch pie plate. Form mashed potatoes into a mountain "rake" with a fork, so the whole surface is grooved. Melt remaining 2 tablespoons butter and brush over mountain. Bake in 400 degree oven for 10 minutes. Sprinkle with remaining 1/4 cup cheese and broil for 1 minute, until cheese has melted and the surface browns slightly. Sprinkle with chopped parsley and serve immediately. Total preparation-cooking time 50 minutes. Serves 4. |
