BEEF STEW (LOW FAT) 
1 lb. top round steak, cut in 2 inch cubes trim well
1 tbsp. canola oil
1 sm. onion, thinly sliced
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. marjoram
1/4 tsp. thyme
1/2 c. dry red wine
1/2 c. low sodium V8 juice

Heat oil in heavy pan, brown beef cubes in small batches until well browned. Remove and set aside while sauting onion soft. Add garlic and seasonings. Stir 30 seconds. Return beef cubes to pan, add wine and V8 bring to boil, lower to simmer, cover and cook for 1 to 1 1/2 hours or until meat tender. Serves 4. 200 calories per serving.

Great, easy to prepare. I added more wine, of course. It simmered for about 2 hours, and came out tender and tasty.
