SPINACH QUICHE 
4-8 slices bacon, cooked and crumbled
2-3 tbsp. chopped onion
1 (10 oz.) pkg. frozen chopped spinach, cooked and well drained
1 c. grated cheese (Swiss, Monterey Jack)
4 eggs
1 c. milk
Dash salt
Dash pepper
Dash ground nutmeg
2 tbsp. grated Parmesan cheese
9 or 10 inch pie shell

Preheat oven to 350 degrees. Combine eggs and milk until well blended. Add crumbled bacon, onion, spinach, cheese and seasonings. Stir to mix, then pour into pie shell. Sprinkle with Parmesan cheese. Bake at 350 degrees for 35 minutes or until knife inserted in middle comes out clean. Cool 10 minutes before serving.
