BACON & CHEESE QUICHE 
1 (9 inch) pie crust
4 eggs, slightly beaten
2 c. milk (half & half)
1/2 tsp. salt
1/4 tsp. dried mustard
1/8 tsp. white pepper
2 c. (or 8 oz.) Swiss cheese
6 slices bacon, cooked & crumbled
2 tbsp. chopped green onions
1 can mushrooms
Opt. - 1 pkg. frozen spinach, thawed & drained

Mix together. Pour into pie shell. Sprinkle 2 tablespoons Parmesan cheese on top. Bake at 375 degrees for 35 to 40 minutes. Allow 10 minutes before serving to cool. Serves 6.
