ARROZ AMARILLO CON SPAM
(PUERTO-RICAN YELLOW RICE)
 
2 cups extra-long white rice
3 cups water
1/4 tsp. salt
1/4 tsp. Bijol (coloring & seasoning condiment)
4-6 tbsp. Sofrito Mayaguez (Puerto-Rican seasoning)
1 (12 oz.) can Spam luncheon meat, diced into small pieces
1/4 tsp. tomato bouillon with chicken flavor (Knorr)
4 tbsp. vegetable oil
3 tbsp. tomato sauce

In large pot heat 4 tablespoons vegetable oil over medium-low heat. Add diced Spam luncheon meat and 4 to 6 tablespoons of Sofrito Mayaguez. Cook for 3 to 5 minutes, stirring constantly. Add salt, Bijol, tomato bouillon, and tomato sauce, one ingredient at a time. Cook an additional 3 minutes.

Add rice (wash and rinse first) and stir occasionally for a few more minutes. Add water, stir and let rice cook on low heat for 30 minutes or until water is absorbed and rice is fluffy. Stir occasionally.
