DEEP-FRIED TWINKIES WITH SAUCE | |
6 Twinkies 4 c. vegetable oil flour (for dusting) Batter: 1 c. milk 2 tbsp. vinegar 1 tbsp. oil 1 c. flour You will need popsicle sticks. Chill or freeze Twinkies for several hours or overnight. Heat 4 cups vegetable oil in deep-fryer to about 375°F. Mix together milk, vinegar and oil. Add flour and mix until very smooth. Refrigerate batter while oil heats. Push stick into Twinkie lengthwise, leaving about 2-inches to use as a handle. Dust with flour and dip in batter. Rotate Twinkie until batter covers entire Twinkie. Place carefully in the hot oil. The Twinkie will float, so hold it down with a utensil to make sure you get even browning. It should be ready in 3 to 4 minutes. Remove Twinkie and drain on a paper towel. Sauce: 1 (10 oz.) jar seedless raspberry preserves 1 c. fresh or frozen mixed berries In a pan, heat preserves over low heat until melted. Add cup of berries and heat until sauce simmers. Cover and refrigerate until served. |
