SAUSAGE & PANCAKE BAKE 
1 lb. mild bulk pork sausage
2 c. pancake mix
1 1/3 c. milk
2 eggs
1/4 c. vegetable oil
2 apples, peeled & sliced thin
Cinnamon & sugar

Brown sausage in a skillet and drain. Mix pancake mix, eggs, milk and oil. Stir in sausage. Pour into greased 9 x 12 inch casserole dish. Layer apples on top and sprinkle lightly with cinnamon and sugar. Bake at 350 degrees for 30 minutes. Serve with maple syrup. Serves 6-8.
