FRIED ZUCCHINI SLICES 
3 (8") zucchinis
2 eggs
2 tbsp. water
1 c. crushed cracker crumbs
2 tsp. paprika
1/8 tsp. oregano
3/4 tsp. Lawry's seasoning salt
1/8 tsp. pepper
1 (8 oz.) can tomato sauce

Slice zucchini the long way, unpeeled, 1/4 to 1/2 inch thick. Beat 2 eggs and add 2 tablespoons water. Dip slices in egg mixture and then in the mixture of cracker crumbs, paprika, oregano, seasoning salt and pepper.

Then fry in oil or bacon fat, at medium heat until slices are soft, but crisp. Serve with tomato sauce which has been heated. Freeze leftover sauce to use another time.
