SPICY SHRIMP | |
1 lb shrimp, peeled, de-veined, chopped 1 cup of rice Hot sauce 3 drops Shrimp can be chopped up with a chopper, grinder, or food processor. Wash rice well in cold running water. Place in saucepan and cover with a little more than an inch of water. Add a 1/4 teaspoon salt, if desired. Cover and boil rice for 5 minutes on high; reduce heat to low and cook until rice is almost done. Stir in hot sauce and optionally, 1 tablespoon butter. While rice is cooking, use a shrimp peeler or knife to remove peel and de-vein shrimp (or buy prepared shrimp). Coarsely chop the shrimp. Mix all together in a medium bowl; season to taste with salt, pepper, and hot sauce before serving (you may optionally add a squeeze of fresh lemon or chopped parsley). Makes about 4 servings.
