PEPPER STEAK 
1 onion, chopped
2 peppers, sliced
1 tsp. paprika
2 cloves crushed garlic
1 can beef broth
2 to 4 tbsp. soy sauce
2 tbsp. cornstarch
1 lb. round steak, tenderize by pounding with edge of a saucer

Saute onions and peppers in oil and remove from frying pan. Cut steak into 1/4 inch wide strips. Sprinkle with paprika. Saute in same frying pan. Add the 2 cloves garlic and beef broth and simmer 30 minutes. Return onions and peppers to frying pan and heat. Blend 2 tablespoons cornstarch with some cold water and thicken the contents of the frying pan. Add soy sauce. Serve with rice.
