ZUCCHINI ZITA | |
1/2 c. minced onion 1/2 c. butter 1/2 c. minced green pepper 1 1/2 to 2 lb. sliced zucchini 3 c. peeled, seeded & chopped tomatoes 1 tsp. salt 1/2 tsp. pepper 4 oz. mushrooms 1 lb. zita or short pasta Sauté onions in hot butter for 2 minutes. Add all other ingredients except for zita. Cook and cover over low heat for about 20 minutes, stirring frequently. Zucchini slices should be tender but still retain their shape. Serve over cooked zita. |
