ROAST PRIME RIB OF BEEF 
3 rib roast of beef (6-7 lb.)
1 tbsp. flour
1 tsp. dry mustard
1 tsp. salt
1/2 tsp. pepper

Preheat oven to 325°F.

Wipe roast with damp paper towels. Combine flour, mustard, salt and pepper. Rub all over beef. Place roast, fat side up, with ribs as rack, in roasting pan (insert thermometer). Roast, uncovered, 3 to 3 1/4 hours or until thermometer registers 140 degrees (rare) or 4 1/4 hours, 160 degrees (medium).

Let roast stand 15-20 minutes for easier carving. Serve au jus or with brown gravy.

Makes 7-8 servings.

The reason, why there saying 140°F, is because 140°F is health code regulation. It should only reach 140°F for a moment. Not keep cooking.

I have been cooking Rib roasts for over forty years.... I preheat the oven to 425°F, put the prepared roast in and turn the heat down to 325°F, cook it until the roasting thermometer reaches 125°F and then I remove the roast and let it set the temp will continue to climb and you will have a medium rare rib roast.

When I cook my Roast, I pull it out at around 120°F and let it set for the 15 to 20 minute period. While this is going on, the roast is still doing what's called: Residual Heat or Carry-Over Cooking.

By the end of the 20 minute setting time, the inside temp should have risen to 125 to 130°F. A perfect rare to medium-rare roast everytime...
