SHRIMP SCAMPI 
6 tbsp. unsalted butter
1/4 c. olive oil
1 tbsp. minced garlic
1 tbsp. minced shallots
2 tbsp. snipped chives
Salt & Pepper to taste
1/4 tsp. paprika
2 lbs. lg. shrimp, peeled & deveined

1. Preheat the broiler.

2. Combine butter, olive oil, garlic, shallots, chives, salt and pepper and paprika. in bowl; blend well.

3. Toss shrimp and coat well.

4. Broil shrimp as close as possible to heat for 2 minutes on each side. Serve immediately. Serves 4.
