SHRIMP SCAMPI 
3 tbsp. butter (at room temperature)
3 tbsp. olive oil
1 tbsp. minced garlic
1 tbsp. minced shallots
1 tbsp. chopped fresh chives
1/4 tsp. paprika
salt and pepper to taste
1 lb. large shrimp, peeled and deveined

Preheat the broiler or grill. Combine all ingredients except the shrimp in a bowl. Add shrimp to coat. Broil or grill (approximately) 2 minutes per side.
