COCONUT MOLASSES CHEWS 
Combine in saucepan:

1/4 c. molasses
1 tbsp. vinegar
3/4 c. honey
2 tbsp. butter

Cook over low heat, stirring constantly until the mixture forms a soft ball when dropped by spoon in cold water. Remove from heat and add:

2 c. coconut
1 tsp. vanilla
1/4 tsp. salt

Drop by teaspoonful onto a greased cookie sheet. Cool and store in refrigerator.

VARIATION: Add 3/4 cup unsweetened carob chips, or sweetened chips just before adding coconut.
