RICE ARTICHOKE SALAD 
1 box UNCLE BEN'S® wild and long grain rice
2 small jars marinated artichokes
3 green onions
8 stuffed green olives
1 tsp. curry powder
1/2 c. mayonnaise

Cook rice according to directions, but leave out butter. Drain artichokes and chop, set aside the marinade. Slice green onions and slice stuffed olives.

Combine cooked rice, chopped artichoke, green onions and olives.

Mix together mayonnaise, artichoke marinade and curry powder. Mix with rice mixture. Cool in refrigerator.
