TABOLI SALAD 
STEP 1:

16 oz. cracked wheat

Cover with cold water. Rinse and squeeze out excess water.

STEP 2:

2 fresh tomatoes
1 cucumber
2 bunches green onion (1 sm.)
1 green pepper
1/2 c. parsley

Add chopped vegetables as fine as possible.

STEP 3:

1 c. vegetable oil
1 c. lemon juice
2 tsp. salt

Mix in bowl and cover cracked wheat and vegetables. Mix all together and let set in refrigerator for 8 hours. Will keep well. If necessary, add more dressing if all is absorbed. Can buy cracked wheat in health food stores.
