CRUNCHY, CAULIFLOWER SALAD 
1 sm. cauliflower, separated into bite size flowerettes
3 stalks celery, thinly sliced
2 sm. apples, cored & diced
1 c. peanuts
1 c. plain yogurt
1/2 c. orange juice
Salt & pepper to taste
1 tbsp. chopped parsley

Combine cauliflower, celery, apples and peanuts in large serving bowl. Blend yogurt, orange juice, salt and pepper in small bowl. Pour over cauliflower mixture; toss to coat. Refrigerate, covered until ready to serve. Sprinkle with parsley. Makes 6 servings.
