MAHI MAHI 
1 to 1 1/2 lbs. mahi mahi
1 c. crushed pineapple
1/4 tsp. ground cloves (or less, to taste)
1/4 tsp. ground nutmeg (or less, to taste)
1/2 c. toasted coconut

Preheat oven to 350°F.

Cut fish into serving size portions. Mix pineapple, cloves and nutmeg.

Place fish on well greased baking dish. Top fish with pineapple mixture and cover with foil.

Bake 10 to 12 minutes, uncover. Top with coconut and bake 5 minutes more.

This was the first time I've ever had Mahi Mahi and it was fantastic. This recipe is absolutely delicious! I had to add about 10 minutes to the cooking time because I hadn't broken it up into serving sizes but it came out perfectly. Highly recommend this recipe.

I was trying to decide how to bake my mahi mahi since our grill is broken, and I found this recipe. We had most of the ingredients on hand so I decided to try it! My husband and I both LOVED it and he said it was one of the best things I've prepared! I used fresh pineapple, nutmeg and allspice instead of clove because I didn't have any cloves, and I toasted the coconut in the toaster oven for a few minutes. I prepared as instructed above, but I did remove the foil and broil for 2 additional minutes because we like it slightly toasted on top. It was perfect! Thanks for this creative recipe!

Followed the recipe, didn't cook in 15 minutes, so I turned it up to 450°F and took off the tinfoil -- done in 10 minutes -- also added a "spear" of fresh mango, across the top of each portion, kinda nestled into the pineapple. Also finished the coconut toasting by broiling on low -- Outstanding -- and I was cooking for a best friend who is a foodie -- he loved it!!

Fabulous! However, our pieces were thick and so had to bake about 30 minutes -- far from 10!
