CRANBERRY SAUCE BREAD 
2 c. flour
3/4 tsp. salt
1/2 tsp. cinnamon
1 1/4 tsp. baking soda
1/2 tsp. baking powder
3/4 c. sugar
2 tbsp. shortening, melted
1 beaten egg
1/3 c. orange juice
1/4 tsp. lemon flavoring
1 lb. can whole cranberry sauce

Put sugar in a large bowl. Sift flour, salt, soda, baking powder and cinnamon; mix well. Mix together the beaten egg, orange juice and lemon flavoring. Pour this into the flour mixture. Blend, then beat for a minute. Add the cranberry sauce and beat thoroughly. Pour into greased and floured loaf pan. Let it set for 20 minutes and then bake at 350 degrees for 1 hour.

This was an easy recipe and I used the leftover cranberry sauce from Thanksgiving (it was Whole Foods deli section). I didn't measure the cranberry sauce, just dumped in a large bowl of it. I also substituted an Egg Beater for the egg, and used Splenda blend instead of sugar. Lastly I added almond extract and nixed the lemon. It was delish and super easy!

This was a wonderful use for leftover cranberry sauce, but mine came out a bit gummy. I left out the orange juice and lemon flavoring because the homemade CS had big chunks of oranges and was quite fluid. Not sure if I overbeat it, or if it needs something else, but the batter tasted good!
