DADDY'S SALT PORK GRAVY 
1 lb. lean salt pork, cut in 1/2" thick strips
3 tbsp. flour
Salt
Pepper
2 c. milk

Freshen pork by covering with cold water in a large fry pan and bring to boil. Drain and rinse with cold water. Fry the salt pork on medium high until crisp on both sides. Remove and drain most of the grease from the pan, leaving about 4 tablespoons of grease in the pan. Add 3 tablespoons flour and brown, slowly stir in the milk to make a cream gravy. Add salt and pepper and the crisp fried salt pork. (Delicious on boiled potatoes, served with hot Johnny cake.) This was Daddy's favorite Saturday night supper.
