TOMATO PRESERVES 
Scald and skin 1 pound tomatoes, add an equal amount of sugar. Let stand 12 hours. Drain juice and boil, until it forms a syrup. Add tomatoes and grated rind and juice of 1 lemon or 3 tablespoons lemon juice and 1 (4") stick cinnamon. Cook mixture until thick.
