GREEN PEPPER CASSEROLE 
3 lg. bell peppers, chopped
1 c. bread crumbs
1 c. sharp Cheddar cheese, shredded and divided
1 1/2 tsp. butter, melted
1 1/2 tsp. all-purpose flour
1 c. milk
1 tsp. salt
1/8 tsp. pepper

Combine the peppers, bread crumbs and 1/3 cup cheese. Stir lightly and set aside.

Combine the butter and flour in a medium saucepan. Cook until bubbly. Gradually add milk. Cook over low heat until thickened, stirring constantly. Add 1/3 cup cheese, salt and pepper and stir until the cheese melts. Add the green pepper mixture and mix well. Spoon into a well-greased 1-quart casserole dish. Top with the remaining cheese. Bake at 350 degrees for 1 hour. Serves 4.
