RHUBARB CREAM CHEESE PIE 
1 unbaked pie shell
4 c. rhubarb
1/2 c. sugar
3 tbsp. flour
1 (3 oz.) pkg. strawberry Jello
2 eggs, beaten
1 (8 oz.) pkg. cream cheese
1/2 c. sugar
1/2 c. sour cream
1/2 c. sugar
1 tsp. vanilla

Prepare Jello according to package directions. combine rhubarb, flour and Jello. Pour into pie shell. Bake at 400 degrees for 15 minutes. Beat together eggs, cream cheese and sugar. Bake again at 375 degrees for 30 minutes. While pie is hot, beat together sour cream, sugar and vanilla. Put on top of pie and cool.
