COTTAGE CHEESE PINWHEEL ROLLS 
1 pkg. dry yeast
1/4 c. warm water
2 1/2 c. sifted flour
1/4 c. sugar
1 tsp. salt
1/2 c. butter
1 (12 oz.) carton creamed style cottage cheese
1 egg, beaten

FILLING:

3 tbsp. melted butter
1/4 c. packed brown sugar
1/2 tsp. vanilla
1/2 tsp. almond extract
2/3 c. chopped nuts

Filling: Combine all ingredients and sprinkle over dough.

Dissolve yeast in warm water. Sift flour, sugar and salt together in mixing bowl. Cut in butter until mixture resembles fine meal. Add cottage cheese, egg and dissolved yeast; mix well. Add more flour if needed to make a dough that can be handled.

Roll on a lightly floured board to a 14 inch square. Spread filling mixture on the dough. Roll up jelly roll style and cut into 18 slices. Place on a greased baking sheet and let rise until doubled in bulk. Bake in a 375 degree oven 20-25 minutes. Yield 18 rolls.
