CHICKEN IN HERB SAUCE 
3 lb. chicken, cut up
2 onions, chopped
1/2 c. carrots, coarsely chopped
3 celery stalks, chopped
1/4 tsp. thyme, crushed
1 bay leaf
1 c. chicken stock
1 c. mushrooms, sliced
2 tbsp. parsley
1 clove garlic, minced

Skin chicken. Combine all ingredients; bring to a boil. Cover and simmer for 45 minutes. Discard bay leaf. Remove chicken and vegetables and place in serving bowl. Boil sauce until reduced to about 1/2 cup. Pour over chicken. Serve. Serves 6.
