BAKED FISH 
2 bunches green onions, chopped
1/4 c. olive oil
3 stalks celery, minced
3 carrots, thinly sliced
1 lg. bunch spinach, chopped
2 tomatoes, diced
1/2 c. minced parsley
2 garlic cloves, minced
4 mint leaves, minced (optional)
2 lb. fish (snapper, etc.)
Lemon wedges

Saute onions; add celery, carrots, spinach, parsley, tomatoes, garlic, mint (optional), salt and pepper. Simmer 15 minutes, covered. Spoon 1/2 mixture into buttered baking pan; cover with fish and spoon remainder on top. Cover and bake at 350 degrees for 45 minutes.
