POTATO AND WILD RICE PANCAKES 
3 lg. potatoes, peeled and diced
1 tbsp. butter
2 c. milk
1 tsp. salt
1/2 tsp. pepper
2 eggs, beaten
1/2 onion, minced
1 c. cooked wild rice
1/4 c. flour
Oil for frying
Butter for frying

Boil potatoes in milk and butter. Remove with slotted spoon. Mash. Add boiling liquid as necessary. Discard unused milk.

Combine all except oil, mix and form into patties about 1/2 inch thick, about 3 1/2 inches round.

Heat oil in skillet. Add equal amount of butter. When hot, add pancakes 4 at a time. Fry on both sides until lightly browned.
