CRISPY POTATO CHUNKS 
2 tbsp. olive oil
2 tbsp. butter, melted
5 lg. Russet potatoes, peeled and cut into 1-inch chunks
1 lg. onion, cut into eighths
4 cloves garlic, halved
Salt to taste

Heat oven to 475 degrees. Place oil and butter in rimmed 10x15 inch baking pan. Toss potato cubes, onion, and garlic in pan. Bake on lower rack of oven at 475 degrees until golden and crispy, 1 to 1 1/4 hours. Stir occasionally while baking. Add salt to taste. Serves 4-6.
