SHRIMP SCAMPI 
1 lb. shrimp
5-6 cloves garlic, minced
3 tbsp. butter
1 red pepper, sliced thinly
Crushed red pepper
1 tbsp. fresh parsley, chopped
Freshly ground pepper
Salt to taste

In a large skillet, melt butter and saute garlic. Add red pepper and stir often. Cook for a few minutes and add shrimp. Cook for a few minutes and add shrimp. Cook for about 5 minutes. Season with crushed red pepper, salt and pepper. Add chopped parsley and serve over pasta, wild rice or rice pilaf.
