VEGETABLE CHEESE CASSEROLE 
1 bag frozen vegetables, broccoli, cauliflower, and carrots; put in strainer and allow to thaw slightly
1 can cream of mushroom soup
1 c. Monterey jack cheese
1/2 c. sour cream
1 c. French fried onions

Mix vegetables, soup, and sour cream; add 1/2 cup cheese and 1/2 cup French fried onions. Add pepper. Mix together and put in casserole dish. Bake for 30 minutes at 350 degrees; uncovered (mixture will bubble slightly around the edges). During the last 5 minutes; add remaining onions and cheese on top.
