TASTY - MOIST MUFFINS 
3 c. grated carrots (cook 6 minutes in microwave)
1 c. rolled oats
1/2 c. sugar
1 c. crushed pineapple with juice
1/2 c. raisins
1/2 c. walnuts
2 tbsp. molasses
1 tsp. vanilla
1 tsp. cinnamon
3 tbsp. Canola oil
1/2 c. wheat flour (whole wheat)
1 1/2 c. bread flour
1 1/2 tsp. baking soda
1/2 c. milk

Mix first 10 ingredients in a large bowl. Mix flours and soda; add to above mixture. Spoon into oiled muffin tins. Recipe makes 6 large or 12 small. Bake in a preheated 350 degree oven for 25-40 minutes depending on size. May use cupcake papers.

Since microwave ovens vary in power, you may need to adjust your cooking time.
