VEGETABLE RICE PIZZA 
3 c. cooked rice
1 egg, beaten
1 c. (4 oz.) shredded Mozzarella cheese, divided
Vegetable cooking spray
2/3 c. tomato sauce
2 tsp. Italian seasoning
1/4 tsp. garlic powder
1/4 tsp. ground black pepper
1 tbsp. Parmesan cheese
1 c. sliced fresh mushrooms
3/4 c. thinly sliced zucchini
1/4 c. sliced ripe olives
1/4 c. diced red pepper
1 tbsp. parsley

Combine rice, egg and 1/3 cup Mozzarella cheese in large bowl. Press into 12 inch pizza pan or 10 inch pie pan coated with cooking spray. Bake at 400 degrees for 5 minutes.

Combine tomato sauce and seasonings in small bowl. Spread over rice crust. Sprinkle with Parmesan cheese. Layer 1/3 cup Mozzarella cheese, mushrooms, zucchini, olives and red pepper. Top with remaining 1/3 cup Mozzarella cheese and parsley. Bake at 400 degrees for 8 to 10 minutes.
