DIABETIC PUMPKIN PIE 
1 c. canned pumpkin
2 c. milk
2 (4-serving-size) packages sugar-free instant vanilla pudding mix
1 (9-inch) baked pie shell, cooled

Combine pumpkin, milk, and pudding mix until smooth. Turn into pie shell. Chill until firm.

Serves 6 to 8.
