HEARTY WINTER SOUP 
2 tbsp. olive oil
1 c. chopped onion
2 cloves of garlic, pressed
1 1/2 lbs. lean ground beef
1 (16 oz.) can whole tomatoes, undrained, cut up
2 (10 oz.) cans beef consomme
2 soup cans of water
2 c. diced raw peeled potatoes
1/2 c. chopped green pepper
1/2 c. red wine
2 tbsp. paprika
2 tsp. salt
1 tsp. pepper
1 tsp. caraway seed
1 tsp. dried marjoram

Heat olive oil in a large heavy saucepan over medium heat. Add onions, garlic and ground beef. Saute, stirring until browned, about 10 minutes. Add remaining ingredients to meat mixture. Bring to a boil then reduce heat and simmer, about 20 minutes. Makes 6-8 servings.

If desired for improved flavor, cover and chill overnight then reheat to a simmer.
