NANA'S IRISH SODA BREAD 
3 1/2 c. flour
1/2 c. sugar
2 tsp. baking soda
Pinch baking powder
1 tsp. salt
1 egg, beaten
1/4 c. butter, melted
1 c. milk (buttermilk is excellent)
1 c. raisins
1 or 2 tsp. caraway seeds (optional)

Sift dry ingredients together. Wash and dry raisins in a dish towel or paper towel. (This helps raisins spread through.) Add raisins to dry ingredients. Add caraway seeds. Mix egg, butter and milk together; add to dry ingredients. Mix well until you get a thick dough. Knead 8 or 10 times with floured hands. Roll the dough into a ball. Grease a 9 inch pie plate or iron frying pan. Press the dough down and pat to meet the sides of the pie plate.

Bake at 350 degrees for about 1 hour (more or less depending on your oven). After baking, coat top crust with butter to keep it soft. Sprinkle with sugar (optional).
