NELLIE'S IRISH SODA BREAD 
1 1/2 tsp. baking powder
3/4 tsp. baking soda
1 tsp. salt
3 tbsp. sugar
2 tbsp. caraway seeds
3 tbsp. shortening (can be butter)
1 c. buttermilk or sour milk
1 c. raisins

TOPPING:

1 tbsp. butter
1/4 tsp. cinnamon
1 tbsp. sugar

Preheat oven to 375 degrees. Grease 8-inch iron frying pan. Combine flour, baking powder, baking soda, salt and 3 tablespoons sugar. Add caraway seeds. Add shortening, cutting into flour with pastry blender until in fine pieces.

Make a well in center of mixture. Pour in buttermilk. Add raisins; mix lightly.

Turn onto lightly floured board. Knead gently 6 times. Shape into 5-inch round; place in prepared pan. Cut an X on top. Brush top with melted butter and cinnamon and sugar. Bake 35 minutes.
